Church Potluck Recipe: Meatless Meal for Lent- Black Bean and Cheese Enchiladas






Lent is coming soon and you need to bring something to Church Potluck. Here is something that is yummy, easy, cheap, and meatless.





Black Bean and Cheese Enchiladas

1 can (15 oz.) black beans, drained, rinsed
8 medium flour tortillas
1 teaspoon ground cumin
2 c shredded Monterey Jack cheese
1/2 cup chopped green onion
Cheddar cheese
Salsa
Sour cream

Spray 13 x 9 inch baking dish with cooking spray. Mix green onion, cumin, and beans in a bowl. Place about 3 tablespoons of bean mixture in center of each tortilla. Top each with ¼ cup Monterey Jack cheese. Roll up tightly; place seam side down in a 13 x 9 inch baking dish. Put some salsa on top of enchiladas. Spray sheet of foil with cooking spray; cover baking dish with foil, sprayed side down. Bake in a 350 degree F oven for 30 to 35 minutes or until thoroughly heated. Sprinkle with Cheddar cheese and bake uncovered for 5 to 10 minutes or until cheese is melted.

Serve with salsa and sour cream.

Freezes well!

This looks great! If you have any other meatless meals in your recipe arsenal, please post them. I'm looking to expand and make all Fridays meatless, but would like more variety. Thanks!

happymomonline- I only have 2 meatless meals that I use, but I am always looking for more. :) So far I have:

1- Black Bean and Cheese Enchiladas
2- Vegetarian Lasagna

*Both of these make a lot and freeze well. I get 8 servings with the enchiladas and at least 12 servings with the lasagna.

I like to cut up acorn, or butternut squash and use in a chili or a soup.
I also like using spaghetti squash in place of pastas.
I'm trying to stay away from gluten products so I can have my spaghetti squash "pasta" with a variety of either seafood or veggie sauces.
